Berry Good Drinkable Desert!

A creative Chef, Simon Rodgers from UHI came to us at Dornoch show with a fabulous idea for a drinkable desert using our Berry Blackcurrant Vodka! It was DELICIOUS!!!

Ingredients :drinkabledesert

6-8 ice cubes
1tbsp Mascarpone cheese
1tbsp Philadelphia cheese
20ml Elderflower cordial (we used Knockfarrel Produce own label)
50ml Berry Good Blackcurrant Vodka
Handful of fresh Blackcurrants
50-100ml of sugar syrup (half and half sugar+water)
Crushed Digestive biscuits to top drink

Method :

Place the ice in a blender and pulse until crushed add all other ingredients and blend until smooth add extra of any you desire more of.

Serve immediately in tall slim glasses and finish with crushed digestives and a straw.


Mhor-Berry Good

This is our new cocktail which really illustrates the versatility of our fine Scottish produce! Works well with either blackcurrant or raspberry gin, so take your pick!

blackcurrant or raspberry gin - 1 measure
Cairn O Mhor Elderflower Sparkling Wine

Take a tall flute or hi-ball glass, place shot of gin in bottom of glass and top with Elderflower Sparking Wine. Frozen whole blackcurrants or raspberries can be added to act as ice cubes!


Raspberries & cream

raspberry vodka - 1 measure
cream soda
lots of ice

Mix Really Raspberry with cream soda for a vintage style drink!


Caithness fruit cocktail

strawberry or raspberry vodka - 1 measure
and/or Orange Liqueur (Cointreau) - 1 Measure
fresh OJ & cranberry juice to mix
lots of ice

Mix all together, taste for mixer and add to own preference. Add lime or peppermint cordial for a new taste.


Strawberry sparkle

1 frozen whole strawberry (acts like an ice cube!)
strawberry vodka - 1 measure
champagne or sparkling wine

Place frozen strawberry in a tall champagne flute, add the Strawbery vodka, top up with champagne or sparkling wine!


Caithness cooler

strawberry or raspberry vodka - 1 measure
lemonade or soda
lots of ice
slices of fruit, mint leaves, cucumber

Put ice in glass, mix vodka and fruit etc and add to glass, top with lemonade, serve in a tall glass.


Island dream

Malibu - 1 measure
Strawberry or Raspberry vodka - 1 measure
add fruit juice of choice or all; pineapple, cranberry, orange juice
ice

Mix it all together, serve over ice. Add lemonade into a tall glass for a long drink.

WARM BERRY GOOD ALMOND SPONGES (Wendy Barrie, Scottish Food Guide)

Ingredients
100g flour
100g vanilla caster sugar
100g butter
1 rounded tsp baking powder
2 eggs
25g ground almonds
2 tblspns milk as required
Seasonal berries, raspberries / strawberries / brambles
Berry Good Raspberry Gin

Method

Pre-heat oven 180C / Gas 4.  Generously butter a muffin tray and line each base with a circle of baking parchment.
Whisk flour, baking powder, sugar, butter and eggs in a bowl until mixture is glossy and smooth.  Add almonds and whisk together, adding milk until the mixture is of a dropping consistency.
Scatter berries evenly in a single layer onto the parchment in each muffin indent.  Spoon mix onto berries and bake for approx. 15 minutes until risen, set and slightly shrunk at the edges.
Carefully remove sponges from tin, invert and peel off parchment circles.
Serve hot on warmed plates with a generous drizzle of Berry Good Raspberry Gin.
